To talk to him in person, you'll need to be in Cadens or go to his domain, a snowy mountain fortress. Yard is open; doors are locked. If he isn't around, leave a delivery with the white wolf.
So if you took someone, say, roughly my height, perhaps with similar build (or smaller), with a relatively healthy working regimen, and a spritely personality, and a bit of magic healing -- about how much, relative to the nearest ounce, could a person lose of blood without adverse health effects?
This is why you shouldn't gamble, Geralt, you'd be shite at it. "Oooh, I should give everyone a fair chance!" Fuck no, you take the gamble you know you'll win!
Because I don't know specifics about blood loss, except that one time I was coughing up pints of it and almost died. Which doesn't count, on account of the djinn.
